Improving food security in Kenya drives Dr. Monica Mburu, a food science and nutrition researcher.

She was part of the inaugural Kenya National Innovation Agency (KeNIA) R2C accelerator, where she developed a fermented beverage made from medicinal herbs that boosts the immune system.

At Dedan Kimathi University of Technology (DeKUT), she serves as a senior lecturer specializing in food chemistry, microbiology, and quality assurance, and leads research on chia seeds for nutritional purposes.

Her company, Afyalishe Wellness, enables her to commercialize her research, creating and bringing to market high-quality organic foods that benefit the community’s health.
